Sharon helped us wash, chop and prepare the potatoes.
They were really tasty.
We got them ready to share at the Harvest Festival.
We also made crunchy potato balls.
Here is the recipe:
2 cups of very stiff mashed potatoes
1 cup of grated cheddar cheese
1 egg (beaten)
salt & pepper (to taste)
2 tbsp flour
1-3/4 cup crushed cornflakes
1. In a bowl, combine the potatoes, cheese, egg, salt, pepper and enough flour to make a
stiff mixture. Chill.
2. Shape into 1 inch balls and roll in cornflakes and place on a greased baking tray.
3. Bake at 300* for 25-30 minutes. - makes about 4 dozen. Eat while warm.
